Switch to kafka-python, add clean Flink config, fix JDK warnings

- Replace kafka-python-ng (archived) with kafka-python (active, 2.3.0)
- Add flink-config.yaml replacing sed hack and legacy flink-conf.yaml
- Remove jdk.compiler --add-exports (not present in JRE, caused warnings)
- Add jvm-metaspace 512m for PyFlink
