fix(backend/copilot): update test to match unknown block type drop behavior

The test_unknown_block_type_preserved_as_placeholder test was checking
for "[__image__]" placeholder but _flatten_assistant_content now drops
unknown block types entirely. Update the assertion to verify the block
content is not leaked into the flattened text.
