fix(ci): remove incorrect GitHub mentions from release changelog

Remove `@` prefix from git log author format to prevent false GitHub
mentions in release notes. Remove contributor list file generation
(CONTRIBUTORS.md, NIGHTLY_CONTRIBUTORS.md) and restore static
"Thank you to all contributors!" message in both stable and nightly
release bodies.
