docs: add order_lots() and order_pct() to trading API docs

Update how-to and reference docs (both CN/EN) to document the new
order_lots() and order_pct() convenience APIs. Also update
examples/_defaults.py comment to reflect that trading APIs now
auto-normalize bare codes.
