Refactor gutter line number rendering into shared utility function

Extracted line number metrics calculation into a reusable static function in
STGutterCalculations. This simplifies STTextView+Gutter.swift for both AppKit
and UIKit, reducing duplicated logic and improving maintainability. The logic
for handling extra line fragments and fragment views is now centralized.
