* Visually improve datepicker to match the dashboard

- Override Flatpickr's default theme to match the dashboard in both light and dark mode.
- Add a custom locale to the datepicker to use two-letter weekday labels.
- Replace custom CSS with Tailwind classes to improve maintainability.

* Add changelog entry
