chore: use moonshotai/Kimi-K2.5-TEE as default model for Chutes

- Replace deepseek/deepseek-chat with moonshotai/Kimi-K2.5-TEE
- Update README.md with full architecture diagrams (Mermaid)
- Add agent loop workflow, context management, and thinking mode diagrams
