Ryan SVIHLA a0247d679f fix: Use deterministic JAR discovery for brokk-core in release workflow ...

Exclude classifier-bearing JARs (-sources, -javadoc, -plain, -all) and
fail explicitly if zero or multiple candidates remain, instead of
picking an arbitrary match with head -1.
