chore(analysis): remove dead tree-sitter entries from version catalog

The UnifiedParser now uses TreeSitterExcavationSite instead of direct
io.github.bonede tree-sitter dependencies. These 30 unused catalog
entries cause Renovate to track phantom dependencies.
