Refresh related work table stats (May 2026) (#231)

Updated stars, contributors, commits, and activity dates for all MCP CLI
clients in the related work table. Reordered IBM/mcp-cli and mcp2cli to
reflect new star counts, and flipped philschmid/mcp-cli to stale.
