fix: train rabitq converter in compact-path ReduceVectorIndex (#425)

Extract the shared train+attach logic into
SegmentHelper::PrepareQuantizeField, used by both
SegmentImpl::create_vector_index and SegmentHelper::ReduceVectorIndex.
