chore(deps): consolidate Dependabot bumps for Next, uuid, and Remix

Align the workspace catalog and Next.js templates on next@16.2.6,
bump uuid in template-prompt-to-video to 14.0.0, and upgrade
@remix-run/* with @vercel/remix to 2.16.7 so peer dependencies stay
consistent (supersedes separate Dependabot PRs).
