Run tests on all tags and update test scheme and simulator in CI configuration

Enabled workflow to trigger on all tag pushes. Changed test scheme from
STTextView to STTextViewUIKitTests and updated the simulator destination from
iPhone 17 to iPhone 17 Pro in the GitHub Actions workflow.
